When the invitation was received through email at the Chronicle, it was a tough assignment to pass up.

This past week, Grant Stevely, the proprietor of Dubh Glas Distillery, sent us the following…

“The distillery will be open for photographs this Saturday, February 28th between 4-7pm. It will have a high level of shine and polish on all the equipment and the tasting area inside the distillery making it ideal for photos. As we move closer to our opening date, the distillery will become more operational and busy not allowing this occasion to take place any time soon. This is a rare opportunity to take photographs of everything undisturbed.”
Welcome to The Dubh Glas Distillery, soon to be Canada’s newest artisan distiller. Specializing in Whisky, Gin and Spirits.
It was a sight to behold, with copper shining as the late afternoon sun bursting through windows set high in a building stretching 30 feet into the air.
It was truly majestic.
And Stevely’s hard work is about to pay off. He has studied to perfect a gin blend he can be proud to offer patrons, whether in his soon-to-open tasting room, or through retail outlets.
Stevely’s Noteworthy Gin is certainly a cut above, something we got to taste first-hand, the other reason this was an assignment not to be turned down.
As we tasted our small sampling of gin, Grant explained the process, what goes into every bottle, and why.
In this photograph, Grant, on left, explains the many process spirits go through until they reach one’s glass to Terry and Linda Bolton, who were intrigued to find out the many details surrounding the distilling process. You can see the copper stretching into the sky on the main distillery in the background.
